I'd say III or IV for Normandy.
However PSC do a Churchill with these options covered. I think Armourfast do best when producing vehicles NOT available elsewhere as quick builds. Their Sherman M4A2 for example is the mainstay of my Sherwood Rangers force.

If there's ever a choice between producing a new vehicle, or a stowage set, I would say the former.
EWM and S and S already produce stowage and upgrades specifically designed for some of the Armourfast kits.
